3-4 dozen pre-frozen tart shells
1/2 cup butter, softened
1 cup brown sugar, packed
4 eggs
2 tspn vanilla
1 tspn lemon juice
generous pinch of nutmeg
2 cups syrup
1 cup pecan halves
1 cup walnut halves (or substitute 2 cups of either)
raisins
Cream together butter and sugar, beat in eggs, vanilla, lemon juice and nutmeg. Blend in syrup, stirring well.
sprinkle raisins in the bottom of each tart shell to cover bottom in one layer (about a dozen raisins) top with 3 assorted nut halves (the kids love doing this part). Top with app. 2 TBspns of butter tart mixture (I use a 32 cc baby formula scoop for this job and it holds the perfect amount).
Bake at 375 for 20 min.
I doubled this recipe and made 7 dozen tarts in about 30 minutes start to finish. Simple. Scrumptious.
