Shepherds Pie

A hearty, hot, wholesome casserole does NOT get any easier than this. Didn't get a chance to snap a pic of this yesterday, and P-Guy took the leftovers to work. I'll upload one next time I make it.

6 cups peeled, cubed potatoes
3 cups carrots scrubbed and sliced
1 small-med onion, diced
1 lb ground beef
2 cans mushroom soup
3 cups corn OR peas
1/4 cup margarine or butter
1/2 tspn seasoning salt
1/4 tspn coarse pepper

  • Boil potatoes and carrots together until tender.
  • Meanwhile, sautee onion in a medium saucepan, adding ground beef once tender, and soup once the beef is browned.
  • Heat corn or peas in microwave
  • Strain potatoes/carrots and transfer to the bottom of a large casserole dish. Mash crudely with a potato masher.
  • Add butter, blend in. Top with seasonings.
  • Pour corn or peas over this, and top with beef sauce.
That's it. Prairie Guy says; "It's quick, it's easy, it's good." (He uses the term "good" sparingly, so read that as GOOD) Ah.... fits my criteria on all fronts. Enjoy!

Thank you so much! I used to make this when the kids were little and had forgotten about it. (Mine was a tad bit different, but still the same idea).

In this economic times it is good to remember and re-do those things that worked!
