6 cups peeled, cubed potatoes
3 cups carrots scrubbed and sliced
1 small-med onion, diced
1 lb ground beef
2 cans mushroom soup
3 cups corn OR peas
1/4 cup margarine or butter
1/2 tspn seasoning salt
1/4 tspn coarse pepper
- Boil potatoes and carrots together until tender.
- Meanwhile, sautee onion in a medium saucepan, adding ground beef once tender, and soup once the beef is browned.
- Heat corn or peas in microwave
- Strain potatoes/carrots and transfer to the bottom of a large casserole dish. Mash crudely with a potato masher.
- Add butter, blend in. Top with seasonings.
- Pour corn or peas over this, and top with beef sauce.

Thank you so much! I used to make this when the kids were little and had forgotten about it. (Mine was a tad bit different, but still the same idea).
In this economic times it is good to remember and re-do those things that worked!
